Watermelon & Mint Salad

Simple, sweet, salty and totally refreshing, take this dish to your next potluck gathering.

8 Cups of cubed watermelon, chilled

¼ Cup freshly squeezed lime juice

½ Cup chopped fresh mint leaves

1 Cup crumbled feta or mini boconcini (fresh mozzarella) balls

Combine all ingredients and serve.
