Easy Pumpkin Chipotle Hummus

Use your own roasted and pureed pumpkin, or cheat a little and use pumpkin puree from a can.

In a food processor, combine:

  •          1 15 oz. can garbanzo beans, rinsed and drained
  •           Juice of a ½ lemon
  •           1-2 garlic cloves, peeled and chopped
  •           2 TBS tahini
  •           1/8 tsp chipotle chili powder
  •           ½ tsp cumin
  •           ¾  cup pumpkin puree
  •           4 TBS olive oil
  •           Salt and pepper, to taste

Process until mixture is completely smooth. Taste and season with additional salt and pepper if necessary. Serve with veggies, pita chips or crackers for a festive and healthy dip!
